Spinach and Cannellini Bean Soup

Delicious Spinach and Canellini bean Soup for weightloss, health and wellbeing

Want a delicious, healthy soup to help you fight off colds during these nasty winter months? Try my healthy green Spinach and Cannellini bean soup for protein packed, immune boosting treat!

Ingredients (serves 1)

1/2 Red onion

2 Handfuls of Spinach

2 Cloves of Garlic

1 Vegetable stock cube

1Tbls Olive oil

175ml Boiling water

70g Cannellini beans

1Tsp Ground nutmeg

Pinch of pepper

Directions

Roughly slice the onion and garlic and add to the frying pan along with Olive oil on a medium heat and fry for around 3 minutes. Next add the Spinach, Nutmeg, salt and pepper and mix in until Spinach wilts. Then add the Cannellini beans and stir for 1 minute. Add the stock cube and water and bring to the boil. Allow soup to simmer for 8-10 minutes and allow to cool for 5 minutes.

Pour all contents into a blender and blitz for 1 minute then serve.
