Spinach and Kale Super-Soup

Spinach and Kale soup for weightloss, health and wellbeing

Want a nice warm, green, healthy soup to help you fight off colds during these nasty winter months? Try my healthy green Spinach and Kale soup for protein packed, immune boosting treat!

Ingredients

2 Handfuls of Spinach

1 Handful of Kale

1 Leek

1/2 Large Onion

1 Medium sized Potato

1 Clove of Garlic

Vegetable Stock

1Tsp Nutmeg

1 Tbs Olive Oil

Salt and Pepper to taste

175CL Water

Directions

Boil potato in a pan of water.

Fry the onions and garlic in olive oil in a saucepan for 4 minutes on medium heat.

Add spinach, nutmeg and salt.

Add stock and boiling water.

Add leek, kale and potato and bring to the boil.

Add some salt and pepper to taste and let simmer for 10 minutes.

Allow to cool for 5 minutes before blending

Serve :)
